Muffins are a great compliment in the morning, afternoon, or night but they are not known for being healthy. Thankfully I have an easy, delicious, and low-fat muffin recipe you can make at home for a healthy snack. You can play around with the recipe to suit your taste, so have fun with it.

Instructions

Things You'll Need:

  • 1 cup non-fat milk
  • 1/2 cup unsweetened applesauce
  • 1 egg or egg substitute (read the label so it equals 1 egg)
  • 1/3 cup Splenda brown sugar (if Splenda is not for you, use 2/3 brown sugar.
  • 1/2 tsp vanilla extract
  • 1-1/2 cups Oat Bran
  • 1 cup whole wheat flour
  • 1 tsp baking power
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 cup of fruit of your choice (blueberries, apples, peaches, or bananas. etc)
  1. Step 1
     

    Preheat oven to 375 degrees. Grease muffin cups if you are not using muffin liners or use Spam for baking to avoid butter.

  2. Step 2
     

    In a large bowl mix together the milk, applesauce, egg, brown sugar, vanilla and the oat bran. Sift together whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Slowly stir the dry ingredients into the oat bran mixture until just blended. Fold in the fruit of your choice and scoop the dough into the muffin tins.

  3. Step 3

    Bake in preheated oven for 15-20 minutes (Baking time may vary depending on your oven)or until muffin tops spring back when lightly tapped.

Tips & Warnings
  • If you don't like Splenda just add 2/3 cup of regular brown sugar.
  • You can also add flax seed for more nutritional value.
  • Replace nonfat milk with soy milk.
