How to make Kelaguen Guihan Anglish

In Guam, my family and I like to pickle certain meats mixed with certain vegetables, Lemon powder or fresh squeezed lemon juice, and Fresh Red Hot Pepper. We call it "Kelaguen" pronounced as Ke la gwen, which means "pickle" in our Chamorro Language. In this article, I'm sharing one of my family recipes: "pickled salmon ears or pickled salmon", we call it "Kelaguen Guihan Anglish" pronounced as: kelagwen Gweehan Anglish (ang as in Tang but with out the letter T). If you're the type of person who loves to eat any pickled meat soaked in a lemoney spicy or non-spicy sauce, then you should try this.

Instructions

Things You'll Need:

  • Glass Bowl
  • Stirring Spoon
  • Drainer (Optional)
  • Cutting Board
  • Knife
  • Fresh Salmon Ears/Fresh Salmon (Raw/Cooked)
  • Yellow/Green Onions (Optional)
  • Cherry/Regular Tomatoes
  • Fresh Red Hot Pepper
  • Ajinomoto "Monosodium Glutamate" (Optional)
  • Fresh Squeezed Lemon/Lemon Powder
  • Salt (Optional: Some salmon come salted)
  1. Step 1

    Slice, dice, or chop all of the following:
    -Yellow or green onions
    -Cherry or regular tomatoes
    -Fresh Red Hot Pepper

  2. Step 2

    Fresh Salmon Ears or Fresh Salmon:
    Thaw, Scale if needed, clean, rinse, drain, and slice/dice/chop.
    Then place salmon ears in glass bowl.
    (Its optional if you want the salmon ears raw or cooked, I prefer raw because the lemon cooks it in, if cooked make sure salmon is dry)

  3. Step 3

    -Pour desired amount of Lemon Powder or Fresh Squeezed Lemon Juice on to Salmon Ears in glass bowl.
    -Pour desired amount of MSG
    -Pour desired amount of salt
    -Pour your sliced/diced/chopped onions, tomatoes, and red hot pepper
    -Stir all ingredients together in the glass bowl for about 10 minutes and then refrigerate for 30 minutes.
    -Stir again before serving.

Tips & Warnings
  • Use as a side dish
  • Enjoy with your favorite home cooked meals
  • The more you keep it refrigerated, the more the salmon becomes soaked
  • MRD: Time and Date food is Made, Time and Date Food is Ready to eat, Dispose food after 3 days...
  • DO NOT Keep kelaguen out of refrigerator for more than 3 hours
