Bourbon mustard chicken with garlic asparagus

Pan seared chicken breasts in bourbon mustard sauce and stir-fried garlic flavored asparagus.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • (For the Chicken)
  • 8 skinless chicken breast fillets, boned
  • 1/2 cup packed dark brown sugar
  • 1/2 cup Dijon mustard
  • 1/3 cup Bourbon
  • 1 bunch green onions, thinly sliced
  • 1-1/2 teaspoons salt
  • 2 teaspoons Worcestershire sauce
  • 4 tablespoons butter or margarine
  • 4 tablespoons vegetable oil
  • (For the Garlic Asparagus Stir-fry)
  • 4 bacon slices, fried, drained, and crumbled
  • 1/2 cup thinly sliced green onions
  • 3 tablespoons vinegar
  • 1 tablespoon water
  • 2 teaspoons sugar
  • 1/4 teaspoon salt
  • 1-1/2 pounds asparagus
  • 8 cloves garlic, peels and chopped
  • 2 medium tomatoes
  1. Step 1

    - - Bourbon Mustard Chicken - -

    Combine and mix well bourbon, green onions, brown sugar, mustard, Worcestershire sauce and salt in a bowl

    Using a meat mallet or rolling pin, pound chicken breasts to 1/4-inch thickness.

  2. Step 2

    In a large pan, brush mustard marinade over both sides of chicken breast fillets. Marinate in refrigerator covered for 2 hours.

    Reserve marinade and remove chicken from the liquid.

    Combine 4 tablespoons butter and 4 tablespoons cooking oil in large skillet or wok over med heat. Sear chicken 8 to 10 minutes (4-5 minutes on each side) or until golden brown. Transfer chicken to a plate with paper towel to drain. Keep warm.

  4. Step 4

    - - Garlic Asparagus Skillet - -

    Wash, dry and trim asparagus. In a stock pot with hot water, boil asparagus, 2-3 minutes. Add pinch of salt to the boiling water if desired.

    Remove vegetable from heat and set aside. Cut tomatoes into eight wedges (each quartered), reserve.

  5. Step 5

    Drain and discard skillet/wok drippings. Pour reserved marinade and bring to a boil over high heat, stirring frequently. Reduce heat to medium.

    Add and saute garlic, onion until tender. Stir in the bacon, water, vinegar, sugar, and salt.

  6. Step 6

    Add asparagus then reduce heat to low. Cover and cook 5-6 minutes. Add the tomatoes to the skillet. Cover and simmer for another 3-4 minutes.

  7. Step 7

    Arrange chicken on serving platter with asparagus stir-fry on the side. Serve immediately. For 4-6 persons.
