Things You'll Need:
- (For the Oysters)
- 12 ounces raw oysters
- 2 eggs, beaten
- 2 cups cornmeal
- 1 teaspoon sugar
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 tablespoons flour
- 2 cups vegetable oil
- (For the Rosemary Butter Sauce)
- 2 Shallots, minced
- 1 teaspoon dried rosemary , crumbled
- 2 tablespoons (about 1/4 stick) unsalted butter
- 2 tablespoons (about 1/4 stick) unsalted butter, additional
- 1/2 cup grapefruit juice
- 1 tablespoon white sugar
- Fresh parsley sprigs

Step 1
- - The Fried Oysters - -
Drain oysters. In a large bowl, whisk and beat eggs and grapefruit juice. Soak oysters in this egg-grapefruit mixture and let sit for 15-20 minutes. -
Step 2
Mix pepper, sugar, salt, cornmeal and flour. Dip oysters in cornmeal mixture.
In a wok or heavy skillet, deep fry oysters in vegetable oil over medium-high until golden brown. Drain on paper towels on a plate. Keep warm. -
Step 3
- - The Rosemary Butter Sauce - -
Melt 2 tablespoons butter in over medium-low in a wok or skillet. Add rosemary and shallots. Stir and cook until shallots soften, about 3 minutes. -
Step 4
Bring contents to a boil then add the grapefruit juice and sugar. Boil until sauce is thickened, approximately 6 to 8 minutes.

Have fork, will eat oysterRemove sauce from heat and stir in the remaining 2 tablespoons butter. Season sauce with salt and pepper to taste. Pour sauce in a sauce bowl and serve with the fried oysters on plate.

on 3/10/2009 This sounds so heavenly!! I absolutely love oysters and I never thought to use grapefruit juice! What a great recipe. The rosemary butter sounds delicious too!!
