How to Make an Authentic Welsh Rarebit

My grandfather was a Welshman. He never cooked, but he did make Welsh rarebit as he had learned from his mother who came to the USA from Wales. I will share his way of making it step by step with you.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • sharp cheddar cheese
  • a pie pan or
  • a microwave dish
  • onions (optional)
  • freshly baked bread
  • platter
  • knife or spatula
  1. Step 1

    Welsh Rarebit

    Slice the cheese in pieces and spread the pieces in a pie pan or in a ceramic dish for the microwave. I prefer to prepare it in the microwave, but grandfather always made it in a pie pan on the top of the stove.

  2. Step 2

    If you like you may slice Vidalia onions in small pieces and layer them over the cheese. I always do this, because it makes an excellent rarebit. Occasionally grandfather put onions in his.
    He always cooked his cheese and onions in the pie pan on the kitchen range. I like preparing it in the microwave, which is easier and faster.
    They did not have microwaves in grandfather's day. If they did, I feel sure he would have used them. Melt the cheese for about 5 or 6 minutes depending how much cheese you are melting. It takes a bit longer on the stove.

  3. Step 3

    When the cheese is melted stir it with a spoon, mixing it so that it is all the same consistency. Spread the rarebit on homemade bread and place it on a platter it. Watch it vanish! Enjoy!
    When I was a child, I always looked forward to getting the cheese that stuck to the bottom of the pie pan. It is especially crispy and tasty.
