Things You'll Need:
- sharp cheddar cheese
- a pie pan or
- a microwave dish
- onions (optional)
- freshly baked bread
- platter
- knife or spatula

Step 1
Welsh Rarebit
Slice the cheese in pieces and spread the pieces in a pie pan or in a ceramic dish for the microwave. I prefer to prepare it in the microwave, but grandfather always made it in a pie pan on the top of the stove. -

If you like you may slice Vidalia onions in small pieces and layer them over the cheese. I always do this, because it makes an excellent rarebit. Occasionally grandfather put onions in his.
He always cooked his cheese and onions in the pie pan on the kitchen range. I like preparing it in the microwave, which is easier and faster.
They did not have microwaves in grandfather's day. If they did, I feel sure he would have used them. Melt the cheese for about 5 or 6 minutes depending how much cheese you are melting. It takes a bit longer on the stove.

Step 3
When the cheese is melted stir it with a spoon, mixing it so that it is all the same consistency. Spread the rarebit on homemade bread and place it on a platter it. Watch it vanish! Enjoy!
When I was a child, I always looked forward to getting the cheese that stuck to the bottom of the pie pan. It is especially crispy and tasty.
