Smooth and cleanly peeled.
Smooth and cleanly peeled.

Does it 'ruffle your feathers' when eggs either won't peel or the shell pulls off stuck on chunks? You end up with something that belongs on a golf course with dimples, gouges and divots, certainly not an attractive appetizer. I researched and experimented until finally I produced the perfectly bald egg, smooth and firm. Here's how:

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • eggs
  • large pan
  • water
  1. Step 1
    Cover and Remove.

    Cover and Remove.

Start the process by boiling the eggs in the best way for an excellent end product. This will work out.
Use a pan large enough to hold the eggs in a single layer. Cover with water 1 inch over the top of the eggs. Bring the water to a boil over medium high heat then immediately cover the pan with a fitting lid and remove from the heat.

  2. Step 2

Using a timer and the following chart, keep them covered for:

    12 minutes for medium eggs
    15 minutes for large eggs
18 minutes for extra large eggs.
Go by the size printed on the egg carton.
When the time is up run cold water into the pan until the eggs are cool.

  3. Step 3
    Crackled Shell

    Crackled Shell

Tap an egg several times gently on a flat surface until it has cracks. Now for the twist! Roll the egg between your palms and keep rolling until the shell has small crackles all over. Do this gently also, you don't want to split the egg during this process with to much pressure. The first cracks will induce the crackle as you roll the egg. You will feel the shell crackling and loosening.

  4. Step 4
    No green Yuck Ring.

    No green Yuck Ring.

Start peeling at the large end of the egg. The shell will come off in big pieces. Some people prefer peeling under running water or dipping into a bowl of water to insure no shell residue is left. Now you have happy, smooth, pretty eggs. Here is an added bonus, there is no green or dark ring around the yolk!

Tips & Warnings
  • The additional minutes are needed to finish the cooking process. Please be sure to follow the timing instructions carefully.
  • Keep eggs refrigerated and use within a week
