How to Make Irish Potato Soup

I love Irish potato soup. It is good for St. Patrick's day or any other day of the year.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1/2 stick butter
  • 2 chopped yellow onions
  • 1 1/2 lbs diced potatoes
  • 3 pint chicken stock
  • 3 tablespoons heavy cream
  • kosher salt and fresh ground black pepper.
  1. Step 1

    Start you Irish potato soup by melting the butter in a heavy sauce pot. Add onions and sweet until they are translucent about ten minutes.

  2. Step 2

    Add the potatoes to the pan and mix with butter and onions well. Cook over medium low for about five minutes. Add stock and simmer for about twenty five minutes or until the potatoes are tender. You can use vegetable stock if you would like a vegetarian Irish potato soup. You can also use canola oil instead of butter.

  3. Step 3

    Remove from heat and puree in a food processor or blender in batches. You can use a emersion blender if you have one. Return to heat and add heavy cream. Season your Irish potato soup with kosher salt and fresh ground pepper. Garnish with green onions or chives. If you don't want to use heavy cream you can use milk instead.
