How to Make Cream of Mushroom Soup

Cream of mushroom soup is a great soup for a cold night. I love the taste and it can be a meal or great an addition to a meal. This soup recipe involves a puree soup and cream soup method.

Instructions

Things You'll Need:

  • 2 Tablespoons butter
  • 1 yellow onion chopped
  • 1 tablespoon chopped garlic
  • 1 lb chopped white button mushrooms
  • 1 tablespoon all purpose flour
  • 4 cups vegetable stock
  • 1 cup heavy cream
  • kosher salt and fresh cracked pepper to taste
  1. Step 1

    To start your cream of mushroom soup melt butter in a soup pot. Sauté the garlic and onion for about five minutes. Add the mushrooms and cook for 10 minutes, stirring often.

  2. Step 2

    Stir in the flour and cook for about a minute. Stir in the stock and bring to a boil. Stir well to avoid lumps. Reduce heat so that it is at a simmer and let simmer for 15 minutes. Puree the soup with a immersion blender or in a food processor or blender.

  3. Step 3

    Return to heat and add the heavy cream to make cream of mushroom soup. Let the cream of mushroom soup warm back up to a simmer and season to taste with kosher salt and fresh cracked pepper.
