How to Grill Lemon Pepper Prawns and Pineapple

One of my favorite things to make on an outdoor grill is grilled prawns or jumbo shrimp.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 Lbs shelled prawns
  • 2 cloves minced garlic
  • 1 tsp olive oil
  • 1/2 stick melted butter
  • 1 small minced onion
  • 3 Tablespoons lemon juice
  • 1 Tablespoon fresh lemon zest
  • 1 tsp lemon pepper
  • 1 tsp ground black pepper
  • 1 tsp salt
  1. Step 1

    Mix the butter and olive oil and mix in 2 cloves minced garlic, 1 small fine chopped onion, 3 Tablespoons lemon juice, 1 Tablespoon fresh lemon zest, 1 tsp lemon pepper, 1 tsp. ground black pepper and 1 tsp. salt. mix these together then add the peeled, deveined, prawns. Mix lightly to coat all the prawns well. Allow to marinate in the refrigerator for 2 or 3 hours.

    Light the charcoal or heat the grill similar to what you would for meat skewers. I usually do my prawns on bamboo skewers that have been soaked in water. The soaking is so they skewer does not burn away. Sometimes I alternate prawn with chunks of pineapple. Often I will grill whole slices of pineapple with my prawns.

    When the grill is the right temperature I will grill my prawns for about 3 minutes each side. I put them a bit higher above the coals than I do for steaks. If the prawns are smaller (jumbo shrimp) I will grill for less time. I grill pineapple as long or even a little longer than the prawns depending on the thickness of the slices. Prawns burn easily if too long on the grill. They are not as forgiving of extra time on the fire as a steak is. Don't leave them unattended.
