How to Make a Perfect Hot Pastrami Sandwich Melt

    • Rye Bread
    • Butter
    • Spicy brown deli mustard
    • Sliced, caramelized onions
    • Lots of Thin Sliced Pastrami
    • Swiss Cheese
    • Deli Dill Pickles
    • Grill Pan

        Thinly slice onions, and cook in a small amount of butter over medium heat until they are nicely browned. Set aside.

        For each sandwich you will need two slices of rye bread. Spread the butter evenly over one side of each slice. On the other side, spread the mustard.

        Heat the pastrami in a pan with a little bit of water, or in a covered dish with a little water in the microwave, until it is steaming hot.

        Heat the grill pan, a non-stick pan is best. It needs to be hot to keep the bread from sticking. Reduce heat to medium. Place one slice of bread, buttered side down in the pan. Place one slice of Swiss cheese on top of the bread. Add as much pastrami as you would like. Top with caramelized onions, another slice of Swiss cheese, and finally the second slice of rye bread, buttered side up.

        Cook the sandwich over medium heat until the bottom piece of bread is golden brown. If the heat is too high, the bread will brown but the cheese won't melt. Carefully turn the sandwich over, and continue cooking until the sandwich is golden brown on the other side. Placing a cover over the pan will help the cheese melt.

        Remove the sandwich from the pan, cut in half and serve with a sliced dill pickle and your favorite deli style salad.
