Once the artichokes are cleaned, the rest is easy.

Instructions

Things You'll Need:

  • 4 large artichokes
  • 3 tablespoons melted butter
  • 3/4 cup finely chopped onion
  • 3 cloves garlic, finely chopped, optional
  • 1/2 cup green pepper, finely chopped
  • 2 celery stalks, finely chopped
  • 1 3/4 cups soft breadcrumbs
  • 2 teaspoons lemon juice
  • 1 egg
  • salt and pepper to taste
  • 1 cup cooked, deveined shrimp, fresh or canned
  • additional melted butter
  1. Step 1

    In a heavy skillet, melt the butter. Add the onion, garlic(if used), green pepper, and celery. Saute until the onion is soft. Remove from heat and cool. Prepare the artichokes.

  2. Step 2

    Pull off the bottom tough leaves, about 6 or so. Cut off the bottom stem evenly so the artichokes will stand. Turn the artichokes right side up and cut off the top 1/3. Snip off any sharp leaf ends. Pull the top leaves apart. Pull out all the undeveloped yellow-white leaves from the center. With a spoon, scrape and scoop out every bit of the prickly center or 'choke'. This tastes unpleasant so make sure you get it all.

  3. Step 3

    Heat oven to 350 degrees. Into the onion mixture, stir the bread crumbs, bread crumbs, lemon juice. Stir in the shrimp. Salt and pepper to taste. Stir in the egg. Adjust seasonings. Spoon the mixture into the prepared artichokes.

  4. Step 4

    Place the artichokes side by side in an oven-proof casserole. Add boiling water to the pan until it is 3/4 - 1 inch deep. Brush the artichokes with melted butter. Cover the dish tightly with aluminum foil and bake for 45 minutes or until the leaves pull away easily.

  5. Step 5

    Serve with melted butter for leaf dipping. Enjoy!
