Make Zucchini Spaghetti Frittata

This is a very healthy and delicious recipe. The zucchini adds a bit of extra flavor to this dish. It is also a great way to use up some of that left over spaghetti. You can cook this one with different meats and cheeses. I will give you the basic recipe and it will be up to you to change it as you like. Enjoy!

Instructions

Things You'll Need:

  • 9 large eggs
  • 1/4 cup of freshly grated parmigiano-reggiano or you can use just plane old parmesan cheese.
  • 2-3 small zucchini' s diced.
  • 3 tablespoons of olive oil
  • 6 fresh basil leaves cut into thin slices.
  • Salt and pepper
  • 12 ounces of spaghetti or any other pasta.
  • 4 ounces of slice salami or ham
  • 8 ounces of mozzarella thinly sliced.
  1. Step 1

    Cook your spaghetti or what ever noodles you are planning on using. This recipe tastes great with left overs.

  2. Step 2

    Wash the zucchini and then dice it up. In a 9-inch non-stick skillet heat up the olive oil on medium-high. Cook the diced zucchini in the oil for about 12 minutes or until the diced pieces brown up.

  3. Step 3

    In a large bowl beat the eggs and mix in the cheese, the basil and then salt and pepper the mixture to taste. Add the fried zucchini, the spaghetti and the salami to the egg mixture.

  4. Step 4

    Lower the heat from medium high to medium. Add half of the spaghetti to the cooked zucchini in the skillet. Mix the zucchini in with the pasta. Cover the mixture with the mozzarella slices. Then pour the rest of the spaghetti on top of the cheese.

  5. Step 5

    Reduce the heat from medium to low. Flatten the surface of the spaghetti mixture using your spatula to help the pasta stick together. Let the pasta cook for about 5 minutes. Then slide the spatula around the edges of the mixture and lift it to make sure it is not sticking. Set it back down in the pan and let it cook for 15 to 20 minutes or until the bottom is brown. Keep an eye on the Frittata so that it does not burn.

  6. Step 6

    Once the frittata is cooked remove it and let it cool. Then it is time to chow down.

Tips & Warnings
  • If your frittata is sticking to the pan add some more oil or use a non-stick pan.
  • Do not burn your self on any of the hot surfaces.
