    Things You'll Need

    • 3/4 cup butter, softened
    • 1/4 cup granulated sugar
    • 1/4 cup packed light brown sugar
    • 1 egg yolk
    • 1 3/4 cups all purpose flour
    • 3/4 tsp baking powder
    • 1/8 tsp salt
    • 3 to 4 drops of food coloring
    • 1 pint ice-cream or frozen yogurt any flavor
    • 3 1/2 to 5 inch cookie cutter

        Combine butter, sugar, brown sugar and egg yolk in a medium bowl.

        Add flour, baking powder, salt and green food coloring. Mix well.

        Cover and refrigerate about 4 hours or until firm.

        Roll dough on floured surface to 1/4 inch thickness. Cut out cookies with cookie cutter. Place on ungreased cookie sheets.

        Bake 8 to 10 minutes or until cookies are lightly brown around the edges. Remove cookies and place on wire racks to cool. Cool completely.

        Remove ice-cream from freezer and let stand at room temperature to soften slightly, about 10 minutes. Spread 4 to 5 tablespoons ice-cream onto flat side of half of the cookies. Place the remaining cookies, flat side down on ice-cream. Press cookies together lightly.

        Wrap each sandwich in foil. Freeze until firm, about 2 hours or overnight.

        Variations:
        1. Easter Ice-Cream Sandwiches ~ Use a "Cross", "Bunny" or "Egg" cookie cutter. Use yellow food coloring for the "Cross" and "Bunny". Use purple for the "Eggs".
        2. For Baby Shower Ice-Cream Sandwiches ~ Use "Baby Buggy", "Baby Rattle" or "Teddy Bear" cookie cutters. Use pink or blue food coloring.
        3. For Christmas Ice-Cream Sandwiches ~ Use "Stars" or "Christmas Trees" cookie cutters. Use yellow food coloring for the "Stars" and green food coloring for the "Christmas Trees".
        4. For Valentines Day ~ Use "Heart" cookie cutters and pink or red food coloring.
        5. For Fall ~ Use a "Leaf" or "Scarecrow" cookie cutter. Use orange food coloring.
        6. For Halloween ~ Use a "Pumpkin" or "Bat" cookie cutter. Use orange food coloring for the "Pumpkin" and purple for the "Bat".
        7. For Thanksgiving ~ Use a "Turkey" or a "Cornucopia" cookie cutter. Use orange food coloring.
        8. For St. Patrick's Day ~ Use a Shamrock cookie cutter. Use green food coloring.

    Tips & Warnings

    • The variations are just the start. You can change the food coloring to whatever makes you happy. If your having a theme party (Beach) use a cookie cutter that matches your theme ("Seashell"). Do the same with Birthday Parties theme use a "Basketball" cookie cutter. The possibilities are endless!
