How to roast and serve a leg of lamb.

Things You'll Need:

  • leg of lamb
  • roasting pan
  • several cloves of garlic
  • salt and pepper
  • mint jelly
  • platter
  1. Step 1

    Put the leg of lamb in the roasting pan with the fat side up. Add a half a cup of water to keep the meat moist as it cooks.

  2. Step 2

    With a paring knife cut slits in the side of the lamb that is facing up.
    Make many slits about a half inch long and a half inch deep in the meat. Cut the cloves of garlic in small pieces and push them into the slits that you made in the lamb. The garlic takes away a strong lamb taste and gives a nice flavor to the meat.

  3. Step 3

    Pre heat the oven to 450 degrees. Insert a meat thermometer in the thickest part the lamb, but do not let it touch the bone. And when the oven reaches 450 degrees, place the lamb in the oven and immediately turn the temperature down to 350 degrees. Cook it until the meat thermometer reaches 175 to 180 degrees, if you want it well done.
    Many people like roast lamb slightly rare at an internal temperature of
    160 to 165 degrees. Do not cover the roast as it cooks. When done, serve the lamb on a platter with mint jelly and baked potatoes. Enjoy!

Tips & Warnings
  • When you buy the lamb, buy meat that is marbled with fat. It will be tender and flavorful.
  • Be sure you buy a full leg of lamb to roast so that you will have plenty for cold lamb sandwiches. Try them with a little mayonnaise on them. They are excellent!
