Things You'll Need:
- 1 box cake mix in desired flavor
- eggs, oil, water, etc. as directed on box
- 2 containers ready made vanilla icing
- green & yellow food dye
- chocolate icing OR
- see step #9

Step 1
Preheat oven according to package instructions.

Prepare cake mix according to package instructions.

Line cupcake pans with paper baking cups. Use St. Patrick's themed cups for an added festive touch.

Fill cups to 2/3 full with batter.

Bake cupcakes according to package instructions.

Step 6
To prepare icing, empty the two containers of vanilla icing into a bowl. Remove enough icing for one cupcake into a separate bowl.

In the large bowl, add several drops of green food coloring and mix well. Continue adding food coloring until you reach your desired color. Set aside. Note: This icing will be used to ice the cupcakes making up the top and rim of the hat.

In small bowl, add a drop or two of yellow food coloring and mix well. Continue adding food coloring until you reach your desired color. Set aside. Note: This icing will be used to ice the one cupcake which will represent the buckle on the band of the hat.

Step 9
For the three dark colored cupcakes which will create the band around the hat, you have a couple of options. 1.) purchase or make chocolate icing 2.) use black or brown food coloring to vanilla icing 3.) Just ice with plain vanilla then press the cupcake into chocolate sprinkles or crushed chocolate cookie. 3.) make a quick ganache out of 1/2 cup broken up chocolate or chocolate chips with 1/2 tbls of butter melted at 50% in a microwave. Set aside.

Once the cupcakes are cooled, Frost 18 cupcakes with the green icing, 1 with the yellow icing and 3 cupcakes in one of the brown or black options mentioned in step #9.

arrange cupcakes in this configurationOn a large platter, arrange six green cupcakes on the first row to form the rim. On the next row, indent one cupcake and line up two dark iced, then the yellow iced, followed by one more dark iced cupcake to form the buckle and band. Next follow with three more rows of four green cupcakes to form the rest of the hat. Follow the picture for guidance.
