Salads are extremely versatile and under-rated. There is much more to a salad than iceberg lettuce! You can make all sorts of salads and get your daily intake of fruits and veggies easily and effortlessly. Salads with lots of healthy fruits and veggies are filling, high-in-fiber, lowfat, and will boost your immune system. Eating your fruits and veggies gives your body the antioxidants, phytochemicals, flavanoids, vitamins and minerals that it needs to fight off infections.

Things You'll Need:

  • For each serving have:
  • 3 cups salad greens- spinach is a great, healthy choice
  • 1/2 cup carrots, peeled and sliced
  • 1/2 Ruby grapefruit-- or 1/2 cup red grapes
  • 1/4 cup yellow and red peppers, chopped
  • 1/4-1/2 cup tomatoes
  • Sprinkle of flax seeds
  • lemon pepper
  1. Step 1
    Wash salad greens and vegetables well

    Make sure all the ingredients are washed, chopped and ready to be added. Also make sure your hands are clean!!

    Place the salad greens in a bowl, then add all the ingredients except the lemon pepper and grapefruit.

    Peel off all the bitter white part of the grapefruit, and hold it over the salad, slowly break apart the segments, using the juice as dressing. Once the grapefruit has been broken into little pieces, sprinkle a bit of lemon pepper on top. Now you are ready to enjoy!!

    If you don't like grapefruit, or just want a change, use mandarin oranges or red grapes. You can substitute lemon juice mixed with mustard and a little honey for dressing.

    Try different types of salad greens too: romaine, red leaf, arugula, watercress, endive, radicchio, mesclun, mustard greens, chicory, escarole, red chard, Bibb, and of course green leaf are all very good for you and high in antioxidants. They are perfect choices for immune-system-boosting salads, and you won't ever get bored with salad again if you mix-and-match these salad greens.

Tips & Warnings
  • Try using different fruits and berries with nuts for toppings- you add fiber, flavor, vitamins and minerals, antioxidants, and variety to your salads.
