This easy quiche is a great use for leftover ham.

If you are reluctant to make a quiche because it sounds complicated or fattening, try a crustless quiche and forgo the calories, fat and fuss of making a traditional crust. You can add a variety of vegetables to spruce up the recipe. Does this Spark an idea?

Things You'll Need

  • 9-inch pie or quiche baking dish
  • 3 eggs
  • 1/4 c. Bisquick
  • 1 1/2 c. milk
  • 1 c. chopped cooked ham
  • 1 c. extra-sharp cheddar cheese, shredded
  • 1/2 c. chopped onions, sauteed
  • 1/2 c. chopped red pepper, sauteed
  • 2 tbsp. fresh parsley, chopped
  • Salt and pepper to taste

Instructions

      Preheat your oven to 350 degrees F.

      Grease your 9-inch baking dish with a cooking spray, oil or butter.

      Mix the eggs, Bisquick and milk in a medium mixing bowl until well blended. Season with salt and pepper to taste.

      Add the vegetables, ham and cheese and mix well.

      Bake at 350 for 40 minutes or until the top is lightly browned and the crustless quiche is set.

Tips & Warnings

  • Serve hot for breakfast or add a green salad for a lovely brunch or elegant dinner.

  • For harder vegetables such as onions, peppers, broccoli, etc. make sure that they are sauteed or cooked slightly before adding to the quiche custard mix. Things that don't need precooking: softer items such as mushrooms, zucchini, spinach, etc.
