How to Make Rice Pudding with Pineapple

Rice pudding is a custard-like dessert that is sweet and creamy. Found all around the world, rice pudding can be prepared in different ways, adding different ingredients. Things You'll Need

  • 1 quart milk 1/4 teaspoon salt 1/2 cup long-grain rice 1/2 cup raisins 1 cup evaporated milk 2 eggs, slightly beaten 1/2 cup sugar 1 teaspoon vanilla 1/2 cup drained, crushed pineapple Dash of cinnamon, if desired Heavy saucepan with lid Mixing bowl Serving bowl Plastic wrap (optional)

Instructions

      Heat the 1 quart of milk and 1/4 teaspoon of salt in a heavy saucepan, stirring as it warms.

      Wash 1/2 cup of long-grain rice and stir the rice into the warm milk and salt mixture. Heat to boiling and simmer 20 to 30 minutes until rice is done. Avoid overcooking.

      Add 1/4 cup of evaporated milk to the mixture and cook the combination for 3 minutes.

      Combine 2 slightly beaten eggs, 1 teaspoon of vanilla, 1/2 cup of sugar, 1/2 cup of drained, crushed pineapple and 3/4 cup of evaporated milk in a mixing bowl. Stir well and pour into the saucepan.

      Cook over low heat 3 to 4 minutes or until the rice pudding thickens. Pour into a serving bowl and stir as it cools.

Tips & Warnings

  • Adding a dash of cinnamon on top of the rice pudding gives it a different flavor. You can also choose fresh or canned pineapple chunks for your rice pudding rather than crushed pineapple. Pineapple could also be served as a side dish rather than cooked into the rice pudding. Covering your rice pudding with plastic wrap as it cools prevents a film from developing across the top.

  • Rice pudding should not be gummy. Avoid overcooking. For a creamy rice pudding, do not use skim milk. Rice expands, so don't be tempted to add extra rice.
