3
Put 2 sticks of butter or margarine into a mixing bowl. Add 3/4 cup of brown sugar and 3/4 cup of white sugar to the bowl. Pack the brown sugar into the measuring cup as tightly as you can to get an accurate measure. Beat the ingredients with an electric mixer until they are well combined and creamy.
-
4
Add 2 eggs and continue beating until fully incorporated. Mix in 1 teaspoon of vanilla extract.
-
5
Shred the carrots with a box grater until you have 1 cup. Stir in the carrots with a wooden spoon.
-
6
In a separate bowl, combine 1 cup of oats, 1-3/4 cups of flour and 1 teaspoon of baking soda. Add to the sugar-butter mixture and combine with a wooden spoon.
-
7
Pour in 1/2 cup of chopped walnuts, raisins or a mixture. Stir until they are evenly distributed.
-
8
Drop the dough by teaspoonfuls onto the cookie sheet at evenly spaced intervals. Four rows of three cookies usually works well. If the dough is too soft to handle, refrigerate it for an hour before spooning it out.
-
9
Bake the cookies for 10 minutes or until browned on top. Allow them to cool before eating.

Tips & Warnings
Buy a bag of shredded carrots to save yourself time. Look in the produce section of your grocery store for precut vegetables. Make your clean-up easier by lining your cookie sheets with parchment paper. The parchment does not stick to the cookies, and you won't have cookie crumbs to wash off your trays.
