Make Quick & Easy Chocolate Banana Cream Dessert Bars

Having last-minute guests over? Forgot about a potluck you were supposed to bring something to? This is one of those life-saving recipes that you can throw together at a moment's notice. It's quick, easy, and from start to finish including a preparation and cook time of about 35 minutes, you will have warm, aromatic, gooey bars your friends will rave about. A note to my dear, faithful readers: you will notice I am breaking one of my rules. I am normally against boxed mixes because of their preservatives. Well... there was a really good sale at the store and I couldn't resist the price as I quickly threw them in my cart and hurried away before my better judgment could catch and scold me. From that moment of weakness came inventions, and this recipe was birthed. I suggest buying all ingredients ahead of time and save them for emergency use only, so you won't feel too bad about pulling that cake mix box out when something quick is needed, knowing this is not a normal practice. :) If you're like my family, you'll always have bananas in the house.

Instructions

Things You'll Need:

  • 1 9x13 or 3-quart rectangular pan
  • 1 cube (8 Tbsp.) butter
  • 2 bananas, the riper, the better
  • 1 box yellow cake mix (an organic brand is a good choice because they are normally void of artificial ingredients and most preservatives)
  • 1 cup semisweet chocolate chips
  • 1 cup white chocolate chips
  • 1 can sweetened condensed milk
  • 1/2 cup shredded or flaked coconut
  1. Step 1

    Put a cube (8 Tablespoons) of butter in your 9 x 13/3-quart pan and put it in the oven. Heat the oven to 350 degrees. Take the pan out once the butter has melted.

  2. Step 2

    Meanwhile, as the butter melts in the oven, place 2 bananas (the riper, the better) in the mixer and beat until they are thoroughly mashed.

  3. Step 3

    Add the cake mix and melted butter to the bananas and mix.

  4. Step 4

    Flatten mixture in the greased pan and sprinkle the chocolate chips on top.

  5. Step 5

    Drizzle the sweetened condensed milk over the bars.

  6. Step 6

    Sprinkle coconut on top, and bake for 25-30 minutes, or until lightly browned around the edges. Do not over-bake. Refrigerate leftovers.

Tips & Warnings
  • For richer flavor, omit white chocolate chips and use 2 cups semi-sweet chocolate chips.
