Both children and adults enjoy the taste of traditional macaroni and cheese. This classic dish features elbow macaroni and a variety of cheese types including cheddar, American and others. A variation of this dish features the addition of goat cheese that adds a unique taste to this traditional favorite. Things You'll Need

  • 1/2 lb. elbow macaroni
  • 2 cups milk
  • 2/3 cup grated Parmesan cheese
  • 1/3 cup goat cheese
  • 2 tbsp. butter
  • 1 tbsp. olive oil
  • 2 tbsp. dried breadcrumbs
  • 1/4 cup goat cheese
  • 1/4 tsp. thyme
  • Grated black pepper
  • Large pot
  • Medium saucepan
  • Small mixing bowl

  1. Preparation

    • 1

      Preheat oven to 350 degrees Fahrenheit. Add macaroni to a large pot of rapidly boiling water. Continue cooking for approximately 10 minutes or until macaroni is tender. Drain water from macaroni using a colander. Set aside while preparing the sauce.

      Prepare the cheese sauce by melting butter in a saucepan over low heat. Stir in flour to make a paste. Cook the paste for about one minute. Gradually add milk and continue to cook for approximately five minutes while stirring constantly to prevent sticking.

      After removing the pan from the heat, add 1/3 cup goat cheese and 1/3 cup Parmesan cheese. Stir to combine the cheeses and create a smooth sauce. Add salt and pepper according to taste. Pour cooked and drained macaroni into a baking dish greased with olive oil. Pour the cheese sauce over the macaroni in the baking dish. Set aside while preparing topping.

      Prepare the topping by mixing together the remaining Parmesan cheese, 1/4 cup of goat cheese, thyme, pepper and breadcrumbs in another bowl. Stir to blend. Spoon this topping evenly over the macaroni in the baking dish. Bake dish in the oven for approximately 30 minutes or until the macaroni is hot and bubbly.

Tips & Warnings

  • Select goat cheese that is pristine white in color for better quality. Choose the mildest form if you want a less pungent taste.
