Southern U.S. meal - - fried breaded pork chops with potato salad.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • (Pork Ingredients)
  • 8 pork chops, 1 inch thick each
  • 4 teaspoons garlic salt seasoning
  • 4 teaspoons garlic powder
  • 1-1/2 tablespoons prepared mustard
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 cup flour
  • 1/2 cup vegetable oil
  • (Side Salad Ingredients)
  • 1 pound red potato
  • 1 hard boiled egg, finely chopped
  • 1 large celery rib, finely chopped
  • 1/2 cup mayonnaise
  • 1/2 small onion, finely chopped
  • 1/8 teaspoon yellow mustard
  1. Step 1

    - - The Potato Salad (Side dish) - -

    Wash and scrub potatoes thoroughly under running water.

    Place potatoes into a large stock pot and fill with cold water. Bring water to boil and cook the potatoes until tender. Remove from heat and allow potatoes to cool before peeling.

    In the meantime, drain and clean the stock pot. Set aside for later use.

  2. Step 2

    In a small pot, place eggs and add cold water. Bring to boil over high heat. Cook eggs until done. Remove pot from heat and add cold water to allow eggs to cool before chopping.

  3. Step 3

    Peel potatoes once cooled. Mach them up one at a time in your stock pot. Add chopped eggs, onion, celery, mustard and mayonnaise.

    Mix well the ingredients. Add salt and pepper, if desired.

    Spoon the combined mixture into a suitable size bowl with lid. Cover and refrigerate until cold.

    - - The Pork Chops - -

    Rinse pork chops under cold running water. Pat pork chops with paper towels and set aside.

  6. Step 6

    In a mixing bowl combine together garlic salt seasoning, prepared mustard, garlic powder, paprika and black pepper. Mix all of the ingredients together to form the seasoning mixture.

  7. Step 7

    Rub seasoning mixture on both sides of each pork chop. Coat each piece of pork with flour. Refrigerate pork chops for 1 hour before cooking.

  8. Step 8

    In a skillet, heat vegetable oil over medium heat. When the skillet is smoking hot, add pork chops and brown on both sides, 10-12 minutes, 5-6 minutes each side.

    Removed cooked pork chops from skillet to plate with paper towels to soak grease.

  9. Step 9

    - - Assembly - -

    Arrange 2 pork chops on serving plates. Spoon the potato salad on the side of chops. Serve.

    For 4 persons.
