We all know the benefits of eating lots of vegetables. Sometimes it is a lot of work to go to the fridge and make a salad. But what if it is already made. This salad can be made in advance, and it will keep for several days. (if it lasts that long)
I have chosen the most colorful vegetables with the most vitamins. To boot..It is absolutely yummy. This will serve at least eight people or eight servings. It is great for diets!

Difficulty: Easy
Instructions

Things You'll Need:

  • one red pepper
  • one yellow pepper
  • three stalks of celery
  • one large cucumber
  • one cup broccoli flowerets
  • one red onion
  • 1/2 cup vinegar
  • 1/4 cup olive oil
  • 1 tsp oregano, basil
  • salt/pepper to taste
  • 1/4 tsp cayenne pepper (opt)
  1. Step 1
     

    Chop all vegetables into small pieces (you can be the judge of this)Make sure to remove seeds from the peppers, peel the cucumbers, chop the celery in smaller pieces than the rest of the vegetables

  2. Step 2

    Make salad dressing by adding all ingredients and shake vigorously before adding to vegetables. Pour over the cut vegetables and stir very well together.

  3. Step 3
     

    Put in airtight container and let marinate for at least one day. This is great with meat, chicken, fish or just by itself.

  • enjoy this salad as it gets tastier daily
