Things You'll Need:

  • Two 14.5 Ounce Cans Chicken Broth
  • 2 Eggs
  • 2 Tablespoons Cornstarch
  • 2 Tablespoons Fresh or Dried Chives
  • 1/8 Teaspoon Ginger Powder
  • 2 Quart Saucepan
  • Whisk
  • Mixing Bowl
  • Metal Fork
  1. Step 1

    To begin making this simple egg drop soup recipe, crack two large eggs into a small mixing bowl. Then, use a metal fork to gently whisk the eggs until the yolks are broken and mixed with the egg whites. Set aside. You will later drop these eggs into your hot chicken broth.

  2. Step 2

    Next, open both cans of chicken broth and reserve one half cup of chicken broth to the side. Mix the 2 tablespoons of cornstarch with the reserved broth and whisk until all of the cornstarch is dissolved. You will later stir this cornstarch and chicken broth combination into the cooked egg and chicken broth mixture.

  3. Step 3

    Then, add the remaining chicken broth and 1/8 teaspoon ginger powder to a 2 quart saucepan and bring to a boil over medium heat. It's best to heat the chicken broth slowly, so as to prevent burning it. Also, be sure to stir the chicken broth frequently while it is boiling.

  4. Step 4

    Next, slowly drizzle the egg mixture into the boiling chicken broth. The eggs should form "strands" of cooked egg as they hit the boiling broth. Take your time with this step of the recipe. You don't want large globs of egg falling to the bottom of the cooking pan and burning. Pace yourself and take your time. This is why they named this recipe egg drop soup.

  5. Step 5

    Finally, slowly whisk in the reserved broth and cornstarch mixture and continue to stir until the soup thickens up. This thickening process usually only takes a minute or two. Be sure to keep whisking to prevent the soup from burning. Remove the hot egg drop soup from the stove burner and sprinkle with either fresh or dried chives. Use as many chives as you like or none at all if you don't like chives. Then, add salt and black pepper to taste.
