How to Make Sweet Pepper and Cucumber Sauce

This sweet pepper and cucumber sauce goes great with so many things. You could serve with cream cheese appetizers, fish or chicken dishes. I serve it with my chicken satay. It is spicy and sweet but the cucumber helps to cool down the heat.

Instructions

Things You'll Need:

  • ½ cup water
  • ¼ cup rice wine vinegar
  • 3 tablespoons sugar
  • 1 tablespoon finely chopped red bell pepper
  • ½ teaspoon crushed red pepper
  • 1/8 teaspoon cayenne
  • ½ teaspoon soy sauce
  • Cucumber
  1. Step 1

    For the sweet pepper and cucumber sauce you will need to mix the water, sugar, rice wine, soy sauce, cayenne and crushed red pepper in a saucepan. Bring to a rolling boil while stirring.

  2. Step 2

    Add your chopped red bell pepper and let the sweet pepper sauce continue to boil until it becomes thick and to the consistency of syrup (it will coat a spoon). Stir constantly. Transfer to a serving bowl.

  3. Step 3

    Now you will need to cut the cucumber into 4 quarters and then slice as thin as you can. You only need a small amount like a 1/8 of a cup once they have been sliced. Add these to the sweet pepper sauce when it is still warm.

  4. Step 4

    Cool the sweet pepper and cucumber sauce. Serve cold with chicken satay.

Tips & Warnings
  • If you don't want it to spicy you can use less or no cayenne.
