Things You'll Need:
- 2 large Portobello mushrooms
- 6 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 2 large cloves of garlic, crushed
- Salt and freshly ground black pepper
- 4 1/2" thick slices fresh country style bread
- 4 small fillet steaks
- 3-1/2oz.mature Dry Jack cheese
- 4 handfuls of arugula
- 1 tablespoon fresh lemon juice

Step 1
For the mushroom sauceTrim off stalks from the mushrooms. Place mushroom in a dish, gill side up.
Mix two tablespoons of olive oil with the garlic, balsamic vinegar and seasonings. Drizzle the mixture over the mushrooms. Let mushroom to marinate for one hour. Reserve the marinade. -
Step 2
With some oil in a skillet over medium heat, put the mushrooms on cap side to the pan and cook for about 3-4 minutes. Turn over and cook the other side for another 3-4 minutes. In the last few minutes cooking the mushroom, pour in the reserved marinade. Transfer to a plate.
Keep the marinade (sauce) in the pan. -
Step 3
Add the steak and bread slice in the skillet, each brushed with olive oil.
Sear the steak until flared on the outside and pink in the center. Remove bread from heat before it burns. -
Step 4
Toss in the arugula and add extra virgin olive oil and lemon juice. Add seasoning, if desired.

Step 5
Beef with mushroom and noodlesPut a slice of bread on each serving plate, and spread the arugula over the bread.
Thinly slice the mushrooms and steaks, arrange on the arugula. Spoon the remaining sauce in the skillet on the contents, if desired.
Shave the cheese over top of everything and drizzle more olive oil.
