How to Make Vegan Slaw

What's a vegan cook-out without slaw? Slaw is a side dish that is usually looked over by vegan cooks. Normally it's made with a ton of mayonnaise or buttermilk, but here is an animal-free recipe that only uses a small amount of vegan mayo. This is a great addition to portabella mushrooms marinated with barbeque sauce.

Things You'll Need:

  • 1 Cup shredded red cabbage
  • 1 Cup shredded green cabbage
  • 2 Tbsp. vegan mayo
  • 1 Small carrot grated
  • 2 Tbsp. white vinegar
  • 2 Tbsp. diced white onion
  • 1 Tbsp. diced chili pepper
  • 3 Garlic cloves grated
  • 2 Tbsp. sugar
  • 1 Tsp. fresh ground black pepper
  • 1 Tsp. salt
  1. Step 1
     

    Prep. Use a very sharp knife to shred the cabbage thinly without bruising it. Cutting the head of cabbage in half first makes the process much easier than hacking at the whole thing. A half head of cabbage will yield about one cup.

    Dice the onions and peppers finely. Use bell peppers for a milder taste, serrano or jalapeno peppers for a spicier taste, or habanero for serious fire!

    Use a microplane to grate the garlic and carrot.

  2. Step 2

    Mix. Add the cabbage first to a large bowl, then add the rest of the ingredients on top. Use your hands or tongs to mix everything. Make sure to drag the cabbage along the sides of the bowl to ensure they are completely dressed and nothing is stuck to the bowl.

  3. Step 3

    Let it sit. Cover the bowl with plastic and put it in the refrigerator for at least an hour, but no longer than three. It needs an hour for the cabbage to soften and take on the flavor of the dressing. If it sits too long, the cabbage will start to wilt.

Tips & Warnings
  • Read the ingredients closely on the mayonnaise. Some are marked "vegetarian", but are not vegan.
  • This is a great dish to make if you are invited to a omnivore BBQ. You will be amazed at the compliments you get from the meat eaters!
