This vegetable and chicken stir-fry is a great quick fix meal during the week. Served along side with some steamed jasmine rice. You can make this completely vegetarian by adding tofu or saitan.

Instructions

Things You'll Need:

  • 1 lb. boneless, skinless chicken breast
  • 2 Tbs. Sherry or White Wine
  • 4 cups of broccoli florets
  • 1/4 cup of water
  • 2 Tbs. Lite soy Sauce
  • 1 Tbs. oil
  • 1 large red bell pepper
  • 1 small can of water chestnuts
  • 1 tbs. minced garlic
  • 1 Tbs. minced ginger
  • 1 cup of shredded carrots
  • 1 cup of fresh snow peas
  • 1/2 large onion, thinly sliced
  • 1 Tbs. Corn Starch
  • 1 cup of Sliced Mushrooms
  • 1 small can of baby corn
  1. Step 1

    Begin by cutting the 1 pound of chicken into bite size pieces or 1/2 inch cubes. Marinate the chicken in the sherry or white wine for 30 minutes. Drain before cooking.

    Steam the broccoli for 5 minutes and rinse under cold water. Cut the bell pepper and onion into thin slices. Drain the baby corn and water chestnuts. Rinse the snow peas under cold water. Shred one cup of carrots or you can buy them already pre shredded in the produce isle at the store. Mince the garlic and ginger. Set all aside.

    In a small bowl mix together the water, cornstarch, and soy sauce.
    In a large wok or skillet sauté the chicken in oil on high heat for 2-3 minutes. Add the onions, garlic, ginger, and bell pepper. Sauté for another 4 minutes. Add the rest of the vegetables and cook for 2 more minutes. Add the cornstarch mixture and cook for 3 minutes or until thickened.

Tips & Warnings
  • You can add any vegetables that you like, if you don't like the vegetables in this recipe.
  • Adding tofu or saitan is a good choice for extra protein.
  • Serve this with steamed jasmine rice
  • If you would like a little crunch you can add cashews or peanuts.
  • Wash hands, cutting board, and utensils with hot soapy water after handling raw chicken.
