Difficulty: Moderate
Instructions

Things You'll Need:

  • 1 full chicken
  • 1 lemon
  • 1 tablespoon peppercorns
  • 2 bay leaves
  • 1 tablespoon chopped garlic
  • 1 tablespoon canola oil
  • salt and pepper
  • butcher twine
  1. Step 1

Cut the lemon into wedges. Stuff the inside of your chicken with lemon, peppercorns, and bay leaves.

  2. Step 2

Now for the tuff part you will need to tress the chicken. Start by cutting your butcher twine three times the length of the chicken. Face the chicken breast up towards you. You will put the twine under the chicken 1-inch in front of the tail. Pull the twine up around the legs and make a cross. Then pull tight and cross back under legs. Pull tight along the upper thighs and pull up the body and pull across the wings. Make sure it is tight and secure. Tie and secure the twine just above the neck.

  3. Step 3

Rub the outer part of the chicken with canola oil, garlic, salt and pepper. Place chicken on roasting rack over a pan.

  4. Step 4

Place your chicken in a 375-degree oven for about an hour. You will need to take the temperature to see when it is done. The internal temperature should be 165 degrees. Now you have a beautiful roasted chicken to serve.
