Sprouted mung beans are nutritious and easy to digest. You can use mung beans in salads, soups, grain dishes, sandwitches, savories, with vegetables and greens and best of all you can eat them just plain.The most popular use of mung beans in the western world is for sprouting. Interestingly, the sprouts contain vitamin C that is not found in the bean. Sprouting is an easy and convenient way to provide fresh salad ingredients on demand. The sprouts are used when they are about 2 inches long. Mung sprouts are a convenient fresh food source ,they are delicious and packed with enzymes and high nutrients

Instructions

Things You'll Need:

  • 1/2 cup whole mung beans
  • several sturdy paper towels
  • twine
  • a fine sieve, a pot with a lid (the beans will expand to about 3 times during the sprouting process so choose pot size accordingly
  1. Step 1

    1 . Sort through the beans and pick out any small stones or twigs.
    2 . Place the beans in the sieve and rinse thoroughly.

  2. Step 2
     

    3 .Soak the beans in warm water for 8-10 hours, then drain thoroughly. 4 .Place the drained beans in the center of a couple of the paper towels.

  3. Step 3
     

    5. Lift up the edges and tie together with twine.
    6. Place the wrapped beans in the pot and cover.
    7. Place the pot in a warm dark spot for 24 hours.
    8. Check the sprouts after 24 hours. If you want them longer, place the beans in the sieve and gently rinse

Tips & Warnings
  • sprouts about an inch long are best. When the sprouts are rinsed before cooking, most of the green skins wash away. It's fine if a few are left behind.
