Things You'll Need:
- FOR THE FILLING: 2 and 1/2 cups (3/4 lb) of cooked lean beef cubed- you can also use ground beef
- 1 can (15 3/4 oz) of mild chili beans in sauce- if you like it spicy, use hot
- 1 (4 oz) green chilies (optional add 1 can (4oz) of jalapenos for heat)
- 1/4 cup of diced white onion
- 1/2 teaspoon of cumin
- 1/4 teaspoon of black pepper
- FOR THE BASE: 1 package (8 1/2) of corn muffin mix
- 1 cup of cold water
- FOR THE TOPPING: 1/2 cup of shredded cheddar cheese

Step 1
Heat oven to 425 degrees. Combine filing ingredients in a medium size mixing bowl. Mix well and put aside.

Combine cornmeal base ingredients, mix well. The mixture will be very thin. Pour batter into a greased 9 inch square baking pan. Spoon Beef mixture into center of batter (leave a 1 inch boarder).

Step 3
Bake in 425 degree oven for 30 minutes or until cornmeal portion is lightly browned and begins to pull away from edge.

Step 4
Remove from oven and sprinkle with shredded cheddar cheese. Let stand for 5 minutes.
