Whether you want to make blueberry, chocolate chips, banana but, or any other type of muffins, it's possible to use this basic muffin recipe to make them from scratch. This recipe is adapted from 'The Everything Classics Recipe Book' by Lynette Rohrer Shirk. We will be using cranberries in this recipe. Does this Spark an idea?

Things You'll Need

  • 2 cups flour
  • 2/3 cup sugar
  • 1 tbsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1 cup milk
  • 6 tbsp. butter, melted
  • 1 tsp. vanilla extract
  • 1 1/4 cups cranberries (or another fruit/add-in of your choice, to taste)

Instructions

      Preheat the oven to 400 degrees F. Grease a 12-cup muffin tin or line the holes with paper muffin cups.

      Mix the flour, sugar, baking powder, and salt in a large mixing bowl.

      In a separate bowl, combine the eggs, milk, butter, and vanilla in another bow using a whisk.

      Add the 2nd bowl's ingredients into the 1st bowl's ingredients, then add in the cranberries (or other fruit/mix-in of your choice).

      Distribute the resulting muffin batter evenly into the 12 muffin cups, then sprinkle the muffin tops with sugar, if wanted.

      Bake the muffins for 15 minutes, or until they are golden brown. Let them cool at least 20 minutes before serving.
