Make a Killer Pork Roast

Cooking a pork roast is an art and here are my secrets.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Pork roast, spices and good size pan.
  1. Step 1

First get yourself a nice pork roast, little fat but not much. I always get a one with a little more and trim some off. The find a pan that has a little space on the side when you put the roast in. Get yourself some sweet basil and brown sugar, garlic and onion salt, pepper. Mix these ingredients together and rub on the roast, then cover and sit in the refrigerator for 2-3 hour. The longer you let set the better.

  2. Step 2

Take the roast out of the refrigerator, get some clove garlic and cut in half. Poke a hole in the roast about every 1 1/2 inch and stick garlic in the holes before cooking. Then preheat oven to 350 degrees, then place pan with roast in oven. Cook 30 minutes per pound.

  3. Step 3

This is the most important step. When meat temperature is at 140 degrees, take roast out of oven and put honey or maple syrup on the top and replace in oven, putting the oven on broil for the remainder of cooking. You may have to drop your rack down a notch or two for this. This will give you that tasty crust than makes pork roast taste so good.

  • This is what's on the table as this Segovia restaurant makes plain with a pig in a crib display in its window.
