Chili is a stew-like soup and can be made with many different ingredients. But the basic ingredients are meat and chilies or chili powder and frequently beans. Although it is satisfying to make a meal from scratch, too often most of us don't have the time. The following is a simple method to make a nutritious and delicious vegetarian chili within a matter of minutes. The recipe is for 2-3 servings.

Difficulty: Easy
Instructions

Things You'll Need:

  • half a bag of meal starter (Morning Star)
  • one jar or container of mild or medium salsa
  • one can of red kidney beans

Open a 16 ounce can of red kidney beans and add to meal starter. Also add liquid from beans and one half cup water.

  4. Step 4

Add salsa from refrigerated container or jar to the mix. The quality and type of salsa may influence the taste of your chili.

  5. Step 5

Mash up some of the beans with a big spoon or other utensil to thicken the chili. Simmer everything for 10-15 minutes.

  6. Step 6
    chili on rice

Serve chili by itself in bowls or on a bed of rice. Start cooking the rice before the chili, because it will take longer. Avocados served with chili will complement the meal. For a quick side dish, just half the avocados and sprinkle with salad dressing or lemon juice.

Tips & Warnings
  • If you like your chili hot, add more than two teaspoons of chili powder and use less than two teaspoons if you prefer a mild flavor.
