How to Make Your Own Canned Beans

Canned beans are a great way to stretch any budget by adding them to various casseroles and soups. With the price of canned beans at at least one dollar, wouldn't it be great to have canned bean for just pennies? Well, can your own! Here is how:

Instructions

Things You'll Need:

  • beans
  • pressure cooker
  • manufacturer's direction for pressure cooker
  • canning jars and lids
  • water
  1. Step 1

    Sort beans by checking them thoroughly for any stones or other debris. Rinse them to remove dust or dirt. Then place them in a container and cover them with twice the amount of water. Let them expand over night, or for at least eight hours. Drain any additional water.

  2. Step 2

    Wash and rinse jars, lids and bands thoroughly. Check the lip of each jar to be sure there are no cracks or chunks missing from the glass where the jar will meet the lid. Fill each jar to one half of an inch from the mouth of the jar, or to where the jar neck begins. Fill with hot water just enough to cover the beans. Add a touch of salt if you desire, though it is not necessary.

  3. Step 3

    Soak the jar lids and bands in a hot water bath to make the seals soft. Then wipe the jar lid with a clean cloth, and using a tongs, bring the hot lid out of the water and place it over the mouth of the jar. Using the band, tighten down the lid firmly, but not too tight that you will have trouble opening it later.

  4. Step 4

    Using the manufacturers directions, process the beans in the pressure cooker. When you are done, be sure to allow the cooker to sit and cool down slowly so the jars can finish sealing.

Tips & Warnings
  • If a jar does not seal, remove lids, wipe lip of jar, and reband the lid. You can hot water bath it to try to get it to seal properly.
  • Another option if a jar does not seal is to drain the beans, and freeze the cooked beans in a ziplock bag until needed.
  • Be sure to mark the dates of you canned the beans and the contents of the jar. While it may seem obvious what is in the jar, if the seal fails and the contents spoil, the information on the lid will help you identify a problem.
  • Always wear shoes when canning to prevent accidental spills of hot water on your feet.
  • Working with a pressure cooker requires caution. Read the directions thoroughly and even consider working with an experienced person the first time to get comfortable with the device.
  • Check your store of home made canned goods every few months to be sure the seals haven't failed on any of the jars.
