Things You'll Need:
- Olive Oil (3 tbsp)
- Zucchinis (2 medium, chopped)
- Red Onion (1/2 large, chopped)
- Garlic (4 cloves minced)
- Chickpeas (1 can drained and rinsed)
- Orzo (1/2 box)
- Fresh Parsley (1/2 bunch)
- Salt (to taste)
- Pepper (to taste)

Step 1
In a large pot, boil water and cook orzo according to box directions, drain and set aside while you are preparing the rest of the dish.

While orzo is cooking, heat olive oil in large pan over medium heat.

Add your zucchinis, red onion and garlic to the oil. Cook stirring until zucchini is tender and onions are transparent. Add salt and pepper to taste.

Add chickpeas and salt and pepper again to taste. Cook for 5 more minutes or until the chickpeas are warmed through, then remove from heat.

Stir orzo into the veggie mixture and stir until everything seems thoroughly warmed.

As a final step, add your chopped parsley and serve! (If you don't have any parsley on hand, or would just like to add another layer of flavors to your dish, some finely chopped mint would work also.)
