Things You'll Need:
- 1 cup flour
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 4 tablespoons granulated sugar
- 2 eggs
- 1/4 cup milk
- 2 teaspoons lemon juice
- 4 apples, peeled, cored, and sliced in 1/4 inch round slices
- icing sugar
- vanilla ice cream (optional)

Step 1
In a medium sized bowl, blend together the flour, baking powder, salt, and two tablespoons of the sugar. Add the eggs, and beat the mixture well. Add the milk and 1 1/2 teaspoons of the lemon juice and beat again. The mixture must be absolutely lump free, so, if necessary, strain it through a wire sieve. The fritters are better if you let this batter stand, covered, overnight, but it can be used immediately if you wish.

Prepare the apples. In a small bowl, blend together the last 2 tablespoons of granulated sugar and the remaining 1/2 teaspoon of lemon juice. Add the sliced apples and stir to coat them completely with the sugar mixture. Cover the bowl and let the fruit stand for 1 hour. Drain the apples.

Prepare to fry the fritters. Fat must be at 375 degrees. Dip the apples into the batter and fry in deep fat until they are golden brown. Drain fritters on paper towels. Sprinkle with powdered sugar. Serve, with ice cream, if you choose. Enjoy!
