      Soak wood chips in water or another liquid to add flavor. Use hardwoods like hickory or the wood from a fruit or nut tree. Avoid evergreen woods because it will ruin the flavor of your food.

      Plug the electric water smoker in and turn on to high unless otherwise specified by a recipe. Put soaked wood chips around the electric coils.

      Fill the water pan with water or other liquid, such as soda, beer, wine, juice, or add herbs to the water. The temperature of the liquid should be warm, or use hot water if the temperature outside is 50F or colder.

      Put your food in. Make sure each piece has enough space to maximize the smoke penetration. Monitor the temperature and keep it at 250F. If it is very hot outside and it is difficult to keep the heat of the smoker at 250F, add ice to the water pan.

      Cook until the food is done. Expect it to take 4 times longer to smoke food than to roast or bake it. Test your food with a meat thermometer. Poultry must reach an internal temperature of 165F, beef and pork must reach 160F.
