How to Make a Carousel Cake

Carousel cakes are beautiful edible displays for birthday parties and baby showers. You can use the traditional carousel horses or a favorite animal character or zoo animals. You can make the cake and cookies ahead of time. Frost the cookies and assemble the cake a few hours before the party takes place.

Things You'll Need

  • Round cake pans Animal or horse cookie cutters Frosting Six candy sticks Frosting flowers Leaf piping tip Cake frosting decorator bag 1/4-inch wide satin or curling ribbon in three colors Dowel rod Turntable cake stand
  • Bake and frost a two- or three-tiered round cake.

  • Bake, frost and decorate six horse- or animal-shaped sugar cookies. They should be hard, crisp cookies. Decorate with a frosting saddle, tiny flowers, and frosting bridle and reins. You can use 1/16th-inch wide satin ribbon for reins.

  • Hold the dowel end flat to the table next to the cake. Mark the place where the top of the cake is on the dowel. Add 10 inches to this mark. Cut the excess length and save for another project.

  • Glue the ends of the three colors of ribbon to the top of the dowel with a glue gun. Wrap the ribbon in a spiral down the stick to the mark for the cake height measurement. Glue the ribbon ends to secure them.

  • Sink the dowel down through the center of the cake leaving the ribbon spiral above the cake surface. Cut one 12-inch piece of ribbon from each color. Place the ribbon centers on the top of the dowel and glue in place. You will have 6 pieces of ribbon hanging down. If needed, tap tiny brad nails into the ribbon and dowel.   • Adhere the decorated cookies to the candy sticks with cake frosting. When dry, place the candy sticks into the cake at equal intervals.

  • Pull one of the six ribbons and place it onto the pole of a horse. Pipe two leaves to hold the ribbon in place. Top with a tiny frosting flower. Repeat with the other five ribbons.

  • Place dried frosting flowers at the base of the dowel. Pipe leaves to give a finished look. Pipe leaves on the base of the horse sticks and sides of the cake and set flowers on to the leaves to adhere.

Tips & Warnings

  • Candy sticks can be substituted for ribbon-wrapped dowels. This is wise if the cake is done more than 12 hours ahead.
