      Put the chicken in a large stockpot full of water on the stove over medium heat. When the water boils, turn the temperature to low and simmer for an hour. Boiling the chicken before grilling it ensures that it has cooked through and makes it fall-off-the-bone tender.

      Set a gas grill on medium heat. If using a charcoal grill, you are ready to grill the chicken when you can hold your hand a few inches above the grill for only about two or three seconds. Cover most of the grill surface with foil, leaving enough space for the smoke and flavors of the grill to come through to the chicken.

      Brush your favorite barbecue sauce on the chicken and place it on the grill. Keep an eye on the chicken: It already has cooked through, so at this point you are simply giving it the flavor of grilling and finishing up the sauce. Barbecue sauce will burn fairly quickly, so turn the barbecue chicken pieces every few minutes until done to your liking.
