How to make a Spring Salad

When the weather starts warming up and you dust off that hibernating grill, it's time to dress up that drab old salad! This salad is perfect for the warm weather with it's refreshing citrus and sweet grapes. It's always a crowd-pleaser in my home and I'm sure it will become a family favorite!

Instructions

Things You'll Need:

  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 2 garlic cloves (minced)
  • 1/8 teaspoon salt
  • 6 cups assorted lettuce (I use a mixture of romaine, spinach and arugula)
  • 1 small red onion, thinly sliced
  • 1 cup seedless red grapes, slice in half
  • 1 can of mandarin oranges, drained
  • 1/3 cup slivered almonds
  • sugar
  1. Step 1
     

    Preheat your oven to 375 degrees in order to toast your slivered almonds. Line a baking sheet with foil then spread out the almonds on the foil. Spray them all lightly with cooking spray and sprinkle lightly with sugar. Bake in your preheated oven (watching carefully!) until lightly browned.

  2. Step 2
     

    Mix together the olive oil, red wine vinegar, minced garlic and salt. I recommend doing so in a small sealable container that you can shake; it seems to mix better this way.

  3. Step 3
     

    In a salad bowl, toss together your lettuce, onion slices, grapes and drained mandarin oranges. Just before serving, pour on your prepared dressing and mix. Finally, sprinkle your almonds on top and enjoy!

Tips & Warnings
  • Watch almonds carefully in the oven. They burn quickly!
