How to Make Healthy Spinach Artichoke Dip

Spinach and artichoke dip is one of those appetizers that is difficult to pass up. This quick and easy artichoke and spinach dip recipe, minus the fat-laden butter and cream, is still rich in flavor.   • 8 cups fresh baby spinach, roughly chopped
  • 1 cup water-packed artichoke hearts, drained and chopped
  • 2 tbsp. extra virgin olive oil
  • 1/2 cup grated fresh Parmesan cheese
  • 1 clove garlic, minced
  • Salt
  • Black pepper

Instructions

      Preheat oven to 375 degrees.

      In a large bowl, combine spinach, artichoke hearts, garlic and half of the Parmesan cheese. Season with salt and pepper. Drizzle with enough olive oil to evenly coat the spinach. Use a good extra virgin olive oil here, as it will add great flavor. Toss to combine.

      Spread the spinach mixture into a casserole dish. Top with remaining cheese.

      Bake uncovered for 15 to 20 minutes, or until cheese is lightly browned.
