How to Make Vanilla Ice Cream

This is a great treat that is very easy to make in an ice cream machine. I use a Cuisinart ice cream machine which retails for about $40, check out the resources section below for the one I used.

Instructions

Things You'll Need:

  • ice cream machine
  • 1 C milk
  • 1/2 C agave nectar
  • 2 C heavy cream
  • 1-2 tsp. vanilla extract
  1. Step 1

    In a medium bowl, stir together the milk and agave until well combined. It is best to use whole milk, but if you want to cut calories and fat, you can get away with using low-fat. I tried it with skim, but it doesn't thicken very well. (See the Resources section below for a great book on baking with agave nectar.)

  2. Step 2

    Stir in the heavy cream. (Be sure that it is well chilled.) Add the vanilla extract to taste.

  3. Step 3

    Turn your ice cream machine on, and pour the mixture through the opening in the top. Let mix for about 25-30 minutes or until well thickened. Transfer to an airtight freezer container for storage. You can serve this with any chopped fruit, over brownies or cookies, or just by itself!

Tips & Warnings
  • You can substitute the vanilla extract for 1 - 1 1/2 tsp. of peppermint extract for mint ice cream.
  • If you want mint chocolate chip add 4 0z. of semi-sweet or bittersweet chocolate chopped up into bits during the last 5 minutes of mixing in the ice cream machine.
