The Tuesday before Lent is called Fat Tuesday in New Orleans but throughout Great Britain, Ireland and Australia it's called Shrove Tuesday. Traditionally pancakes are eaten on Shrove Tuesday. These heart healthy oatmeal pancakes are easy to make and taste delicious with honey nut butter or Vermont maple syrup. Add even more health benefits by serving with fresh raspberries, blueberries or strawberries.

Instructions

Things You'll Need:

  • 2 cups AP flour
  • 1 cup cracked and toasted oats
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1 cup milk
  • 1 cup water
  • fresh berries (optional)
  • maple syrup
  • butter
  1. Step 1

    In a large mixing bowl, stir dry ingredients together.

  2. Step 2

    In a smaller bowl whisk eggs with wet ingredients and combine with dry ingredients. Stir until thoroughly combined but don't over mix.

  3. Step 3

    Cook pancakes on a hot, greased griddle until golden brown on both sides. Turn the pancakes when the edges appear dry and small bubbles appear on the uncooked side. To make silver dollar pancakes, place 1 tablespoon of batter on the griddle and cook until golden brown. To make blueberry oatmeal pancakes add the berries right before you flip the pancake. Serve hot with maple syrup, honey nut butter, or fresh sliced strawberries, fresh blueberries or fresh raspberries.

Tips & Warnings
  • If you can't find "cracked, toasted oats" use steel cut oats but don't use instant oatmeal it doesn't have the same flavor or texture.
  • You can use whole wheat flour for even more whole grain goodness.
  • Oatmeal lowers cholesterol and controls blood pressure.
  • Serve with honey nut butter or Vermont maple syrup.
  • Melt butter and maple syrup together to top the hot pancakes.
