With the right set-up, buffet lines will not become delay lines.

Buffet tables are used for both large and small dinners to make serving easier. The way in which a buffet table is set up will determine the flow of the line. When lines move slowly, guests become frustrated and the entire event can be affected. Instructions

    • 1

Line up the buffet tables end to end to create one long table and place them far enough away from the wall that people can access both sides of the buffet line.

    • 2

Cover the tables with a plain white tablecloth or use a color that is more fitting to the occasion or holiday. Add a matching table skirt that drapes down to the ground around the sides of the table to add elegance.

    • 3

Set the plates on both sides of the front of the table along with the silverware to allow guests to grab all of the necessities at the start of the line.

    • 4

Follow the plates with the main course, and then the sides. This will help move the line along smoothly as the main course and sides are easiest to serve up with with a quick scoop.

    • 5

Position the salad and the bread next, with several salad tongs and small salad plates or bowls for those who are unable to fit the salad on their main plate.

    • 6

Place all of the finger foods next and provide ample utensils for grabbing all of the small portions so that more than one person on each side can serve themselves, guaranteeing steady movement through the line.

    • 7

Leave napkins at the end of the table so that guest do not have carry them while they are walking down the line.

    • 8

Position small saucers with serving spoons on both sides of the table next to each item that requires serving utensils. This will help to keep the tablecloth clean.

    • 9

Establish a separate table for desserts and sweets to help the flow of the line. Many guests will likely visit the dessert table after they have finished eating their main dish and sides.

    • 10

Decorate the table tops with occasion appropriate items such as leaves for fall or holiday decor.
