Vegetable chips are a delicious and healthy way to enjoy vegetables. They also make a very healthy alternative to greasy and calorie filled processed chips. Root vegetables are the best for homemade vegetable chips as they hold their shape and flavor better. Just about any root vegetable can be used to make vegetable chips, from potatoes to carrots. You just need a little olive oil and salt to flavor the chips, though you can also use a vegetable cooking spray.
Things You'll Need
- 1 peeled and thinly slice sweet potato
- 2 peeled and thinly sliced red potatoes
- 1 peeled and thinly sliced carrot
- 2 peeled and thinly sliced radishes
- 1 peeled and thinly sliced butternut squash (use the narrow end only)
- 3 tbsp. olive oil
- 2 baking sheets
Add sliced vegetables to a large bowl.
Toss with the olive oil so that the vegetables are fully coated with the oil.
Spread the vegetable chips on the two baking sheets in a single layer.
Sprinkle with salt and bake for 18 minutes at 375 degrees. Turn the vegetables over at the halfway point during the cooking process.
Remove from oven and serve hot or let cool and store to eat later.
