You will learn how to make grandma's favorite rice. Although it is called grandma's favorite rice it is made with Orzo pasta that looks like rice

Instructions

Things You'll Need:

  • 3 Cups Low-Sodium Chicken Broth
  • 1 Cup Orzo Pasta
  • 2 Cups Asparagus
  • 1/2 Cup Grated Parmesan Cheese
  • 1/2 Cup Mozzarella Cheese
  • 1 Medium Pot
  • 1 Stirring Spoon
  1. Step 1

    In your medium pot bring chicken broth to a boil over high heat.

  2. Step 2

    While waiting for your chicken broth to boil rinse asparagus and cut into 1 inch long pieces.

  3. Step 3

    Once your chicken broth is boiling add in your one cup dry orzo pasta

  4. Step 4

    Reduce heat and boil gently for 8 minutes.

  5. Step 5

    Add asparagus and continue to cook stirring often until pasta and asparagus are just tender to bite and almost all liquid has been absorbed this will take about 5 to 7 minutes

  6. Step 6

    Stir in 1/4 cup shredded parmesan cheese (not the powdery can stuff) and 1/4 cup mozzarella cheese.

  7. Step 7

    Serve and sprinkle remaining cheese over finished dish

  8. Step 8

    This will make 4 to 6 servings.

  9. Step 9

    You can use any vegetable you can also use a combo of vegetable such as adding in green onions and tomatoes at the end with the cheese.

Tips & Warnings
  • Never drain any of the chicken broth it is to be absorbed completely into the noodles.
  • The dish will be extremely hot and will need to cool down before serving and eating.
