Hungarian Goulash Over Potatos
Hungarian Goulash Over Potatos

Watch out the kids are gonna love this one and it's a great way to get them to eat carrots.

Difficulty: Easy
Instructions

Things You'll Need:

  • 2-lb. stew beef, 2 14oz cans of beef broth, one 14oz bottle of Catsup, one cup of diced carrots, 2 cups of diced onions, 3 medium cloves of garlic course chopped. One tablespoon Hungarian paprika.
  1. Step 1

Other ingredients you will need is ground mustard cyanine pepper corn starch some tyme leaves and some oregano. Prepare the beef by cutting it into bite size chunks, set in a bowl and add salt & pepper and "gravy master". Also prep the veggies, dice the carrots and onions and course chop the garlic. Sometimes I will add a small green bell pepper to this, also diced.

  2. Step 2

Brown the meat in a frying pan with a little lite oil, the meat will make a lot of liquid, this is fat and water, drain & discard this. When the meat is browned transfer to a stew pot and add the 2 cans of beef broth. Start it on a high heat until it almost comes to a boil then drop the temp to simmer. On my electric stove this is #1. Add the veggies and cover & let simmer for 1 hour.

  3. Step 3

Now before we go on, a word about Paprika. Now a days you can find imported Hungarian Paprika in just about any market. It comes in "hot" and "sweet", the hot is harder to find but if you do use the hot omit the cyanine pepper.

  4. Step 4

After one hour, add the catsup and a tablespoon of the paprika, a teaspoon of the ground mustard, a half teaspoon of tyme, a pinch of oregano and a pinch of cyanine pepper. Stir it all up and cover and simmer for another hour. In a cup add 1 tablespoon cornstarch and 1/4 cup cold water, mix it up as good as you can and let it stand at room temp if too thick add a little more water. This is a thickener. After one hour slowly stir in the cornstarch mixture, you may not need it all, judge by eye. Your done. You can serve this over small potatoes like in the photo or over noodles or rice. And it goes great with a toasted slice of corn bread & butter.

Tips & Warnings
  • Serves 4 people, if you think you need more just double the ingredient's.
  • Warning, this may cause extensive over eating! LOL!
