In the summer time, I love to make dishes that feel like summer, like potato salads, pasta salads and iced tea, don't you?

This Green Bean Salad recipe is a healthy and delicious side dish that is sure to be a hit at your next picnic or family barbeque. Everyone will want the recipe and it's so easy to make, too! Give it a try and see for yourself!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Serves 8-12 as a side dish
  • 1-2 lbs of fresh green beans
  • Dressing:
  • 1/2 cup Balsamic vinegar
  • 1/3 cup water
  • 1/3 cup EVOO
  • 1/4 cup sugar
  • 2 1/2 tablespoons of grated Romano or Parmesan Cheese
  • 1 1/4 tsp salt
  • 1 tsp lemon juice
  • 1/2 tsp minced garlic (or a dash of garlic powder)
  • 1/4 tsp dried parsley flakes
  • pinch of dried oregano
  • pinch of crushed red pepper flakes
  1. Step 1

    Purchase fresh green beans from your grocery store, fruit market or local farmer's market. Make sure they are firm and have a good color to them. Clean and rinse them in a colander. Cut the ends off.

  2. Step 2

    Boil the green beans in salted water for about 5 minutes. You don't want them to get too soft. It is better if they are firm for a salad.

    Drain in a colander and rinse with cold water to stop the cooking process.

    Transfer the green beans to a large tupperware type of bowl.

  3. Step 3
    Serve and Enjoy!

    Mix the dressing ingredients in a small bowl. Pour over the beans.

    Cover the beans with a lid and refrigerate at least an hour before serving.

Tips & Warnings
  • You can use a mix of green beans and yellow wax beans for more visual interest
  • Refrigerate any leftovers. Last up to 3 days in the refrigerator.
