How to Make a Delicious Vegetable Lasagna Recipe

This delicious, vegetable lasagna recipe has three different kinds of cheese in it. The lasagna makes a large portion so if you have a large family you will have plenty. If your family is smaller you can cook once and eat twice, share it with company, or freeze part of the lasagna for a meal at a later date. This lasagna is packed full of healthy ingredients for you and your family to enjoy.

Instructions

Things You'll Need:

  • 10 lasagna noodles
  • 1 pound spinach or broccoli,(chopped) fresh or frozen
  • 2 cups celery (diced)
  • 1 cup shredded carrots
  • 1/2 cup chopped onion
  • 1 tablespoon oil
  • 1-15 ounce can tomatoe sauce
  • 1-6 ounce can tomatoe paste
  • 1 jar (meatless) spaghetti sauce
  • 1/2 cup black olives (chopped)
  • 1 1/2 teaspoon oregano (crushed)
  • 16 ounce creamed cottage cheese
  • 16 ounce Monterey Jack cheese (sliced)
  • 1/2 cup grated parmesan cheese
  1. Step 1

    To make this vegetable lasagna recipe begin by cooking the lasagna noodles according to the package directions. Slice the Moterey Jack cheese into thin slices and set aside.

    Chop and wash the spinach or broccoli (if you are using fresh), and cook until not quite tender. If you are using frozen vegetables cook until not quite done according to package directions.

    Chop up the celery and onions. Grate the carrots (or buy shredded carrots).Chop the black olives and set them aside.

    In a large frying pan add 1 tablespoon of oil and sauté the carrots, celery, and onion until tender. Remove pan from the heat. Add the black olives, tomatoe sauce, and tomatoe paste and oregano to the frying pan. Stir together until well mixed.

    Now that all of the ingredients are prepared it's time to layer the lasagna into a 13x9x2 pan. Spray the pan with cooking spray. Layer 5 lasagna noodles on the bottom of the pan, overlapping the noodles. Using half of the creamy cottage cheese frost the noodles, covering them as thoroughly as possible. Next, put half of your vegetable (spinach or broccoli) on top of the cottage cheese. Add a layer of thinly sliced Moterey Cheese (use about 1/2 of it). Put half of the sauce/vegetable mixture on the top and spread it evenly on the cheese. Open the jar of spaghetti sauce and add more sauce (as desired). Sprinkle half of the parmesan cheese on top.

    Add a second layer to the lasagna dish repeating the same layers as before. The top should have Moterey Cheese and parmesan cheese on it. Bake at 375 degrees in a hot oven for 30 minutes or until the casserole is bubbly.
    Serve hot with salad and garlic bread to complete this meal.
